Can't seem to change Opportunity Close status reasons in CRM 2013

I want to change the Opportunity Closed status reasons - the out-of-the-box options are just "Cancelled" and "Out sold".

I tried going into Settings > Customizations >  Opportunity > Fields > Status Reason and change it there, which seemed to work for others in the forum. However that "status reason" field seems to be just for Open Opps.

I also found a "Status Reason" field under the Entity "Opportunity Close" - which makes sense. Maybe it's an change since the upgrade.

However, even as an admin - everything is grayed out. I can't choose which type of Status to edit. I can add new Values to 'Open' status and that's it. Weird thing is that this seems like the right place, however it doesn't list the "Cancelled" and "Out sold" selections, leading me to believe it's pulling this from somewhere else.

Anyone else have this issue?
