I was able to install Sales Insights on my trial instance of Dynamics 365 (220.127.116.113) and I also have a trial of Dynamics 365 AI for Sales along with Office 365 E3 trial.
After the Sales insights installation I went to the Dynamics 365 Admin Center > Application and see that the Dynamics AI for Sales is not configured. I select the application Dynamics AI for Sales and click on Manage. It gives me the below (also attached) error message.
If I go inside Dynamics 365 custom and go to Settings > Sales AI - The Dynamics 365 AI for Sales has a "Provision the User" button. When I click on it I get the same error message.
I am the Global Admin and I was able to install Sales Insights so am not sure what am I missing here?

I repeated your operation in my environment and I did not encountered the same issue.
After I clicked on "manage", I went to this following page.
Did you log in to other none-admin accounts? I suggest that you could clear your cache and try again.
If the issue still exists, please send me your Organization url by private letter and we will submit a ticket to Microsoft for you.
In addition, I didn't find the "Provision the user" button in settings. Could you kindly share your screenshot?

you should have office 365 global administrator role and dynamics 365 system administrator role.
If you already a office 365 global administrator. Then add another dummy user and give him global access and wait for 1 to 2 hrs of time.
Now access sales ai (in incognito mode) with that dummy user (must have office 365 global administratot role) .
you will be able to get that.
It works for me. May be it helps you.
This issue has been confirmed as a bug and we are working on the fix on our end.
The root case is that Azure made some changes in OAuth code flow and Authorization codes will no longer be available for reuse.

This is more of a Bug Fix issue from MS end, i faced smilliar issues regarding the same.
But, in few cases I have worked on even though I got the error the Solution was getting installed in the background. (Give the Solution some time to Marinate).
Also, you need to be a GLOBAL ADMIN to enable this feature and in the meanwhile please clean all the Cache, cookies etc and please use Incognito.
In Provision the user, it asks for Org and data sharing consent. I clicked through it and was able to set it up.
Also, can you try from the Admin Center's Solutions for the instance?
In Admin Center's Solutions, search for "Sales insights add-on" and install from there.
Just Clear the cach on your browser then start the configuration again.
