My customer waited for month to get back mobile offline functionality. Now as it is back, I am confused about what happend with that feature in the last few month. From what I see so far, it is just as crappy as it was before. Very limited functionality as stated out here and we are also confronted with "The entity 'msdyn_customerasset' in profile '[...]' is configured with the filter download related data only, however there are no relationships specified for this entity in profile item associations. If an entity is set to download related data only you must specify a profile item association to this entity."
The thing is, we DO have an item association!
Because of such things we reduced our mobile offline profile to a bare minimum, so we can at least do some testing on our tablets. We discovered the same nonexistant reliability as it was one year ago. Offline configuration not beeing synced without reinstalling the mobile app, data not synced, views that do not work offline (even though we included all the entities used in the view) and so on. I don't see any progress on this feature.
Is anybody else using mobile offline right now, especially for Field Service? Were you able to make it work for you?
I ran into the exact same issue and it was because I added the MOBILE OFFLINE PROFILE ITEM ASSOCIATION the wrong way around.
Example: I would like all my Active Opportunities to be synced for mobile offline, I also would like any contact associated with these opportunities to be synced for mobile offline.
Add a MOBILE OFFLINE PROFILE ITEM for Opportunities. Set the "Data Download Filter"="Other data filter" and "Download my Records" checkbox checked. Add a MOBILE OFFLINE PROFILE ITEM ASSOCIATION to Contact.
Add a MOBILE OFFLINE PROFILE ITEM for Contact and set the "Data Download Filter" = "Download related data only"
(The mistake I made was: to the MOBILE OFFLINE PROFILE ITEM for Contact I added a MOBILE OFFLINE PROFILE ITEM ASSOCIATION to Opportunity - wrong way around)
"Is anybody else using mobile offline right now, especially for Field Service? Were you able to make it work for you?" - This went GA in end April 2019 and Microsoft have been making lots of updated/fixes (silently). I am using mobile offline heavily as I have developed an inspection app that needs to work in the field where user potentially have no coverage. There have been some issues, but it is a lot smoother now that in April.
I raised 2 support request regarding these problems and I was in contact with 3 different Microsoft support engineers. Nobody of them was able to lead me into the right direction. You are my hero! BUT I still get error messages, that make the whole thing appearing a bit bugy:
Microsoft.Crm.CrmException: You have specified one or more profile item associations for the entities defined in the profile 'Field Service'. Please review the profile item associations involving the entity 'msdyn_customerasset' which has an association count of 2 and exceeds the supported limit of 1.
The thing is, that I really, really, REALLY only do have one profile item association for the 'msdyn_customerasset' entity. The problem also appears for account entity, contact entity and some others, but not for all entities.
I even querried all profile item associations in the system, to see if there might be some orphaned or hidden item or something like that, but I think it looks pretty good:
I don't understand why it keeps saying that there is more than one of these. Is this a bug or a feature? How to solve or work around this?

My suggestion is to recreate the Profile (or create a new one). After you add each MOBILE OFFLINE PROFILE ITEM or MOBILE OFFLINE PROFILE ITEM ASSOCIATION Publish the profile. That way you will be able to tell exactly at what point the issue occurred and it may point you in the right direction.
