Does anyone have documentation related to setups for localizations and country-specific features for France, Belgium and Poland.

Do you plan to setup and configure legal entities for those countries or why do you need those documents?
Yes we are trying to setup legal entities for these countries. I would require these documents to understand the country specific features released by Microsoft and also if there are any regulatory requirements for the same.

In addition to the link mentioned above, is there any documents for sales tax or VAT configurations for countries in Europe and also the reports that can be generated?
I'm aware that in the past, there was a document for the VAT in Belgium. There were some changes in these regulations and there is no public new document. I would recommend to find a financial consultant in each country to help you creating the setup correctly and give some advice.

As Andre mentioned, please do not try making the setup yourself based on a documentation website/paper. Especially the configurations for France and Poland are pretty tricky and difficult and things can terribly go wrong. For that reason, it is the best in my opinion getting a local D365Fo/AX expert involved here.
