i want to realize a guided tour through the production environment. How far can you move away from the qr-code until it loses conection? Is it possible to add more qr-Codes to one guide or to "rescan" it? Or it is possible to automatically start another guide after one guide ist finished (one guide per machine for instance)? Is there another way to realize guides where the User is moving around?
The ideal scanning range is from 50 to 150 centimeters (cm).

this is not really what i meant. I need to a way to realize a "long" guide, that lets the user walk around while using it.

Per Nya's response, ideal scanning range is 50 to 150cm (described here). Beyond that, the HoloLens will have difficulty detecting the QR code.

You can create a link to a specific step in a guide. In the outline view, right-click the step and select Copy link to this step.
And then per the instructions here, you can create a QR code that links to that step.

I totally missed the link provided above. I did not know you could use technically any qr-code for anchoring (if im reading this right). This is game-changing.

The way to think about is there is natural 'drift' between the hologram and the anchor point and due to the the 'lever arm effect' this drift is amplified the further you get from the anchor point. Certain environmental characteristics (number of feature points, lighting etc) do have an impact here as well.
Regarding adding an anchor 'mid-guide' for a guide in a very large space, you can select the 'anchor' icon in the step card to re-scan the anchor which will reset all the holograms to the new anchor point - you would need to do this while authoring and then create a step in the guide to instruct the operator to do same.
