this week my team started using PSA. So far so good :)
We entered all our existing projects and also everyone entered their vacations for 2019 using the "Time Entries". These entries are submitted and approved.
But what happens, if the vacation has to be cancelnd or moved, due to an urgent project? Is there any way to "un-approve" or delete this time entries?

Christian DW congrats on your implementation. V3.5 of PSA introduced the possibility to recall approved time entries. While I have not yet tried recalls for vacations/absence, I'm taking a bold assumption that it work for them too.
thanks, than we have to update some when. We are running V2 at the moment. But I found another solution over the weekend.
It is possible to delete the vacation time entry, using the Ressource Work hour calendar.
Yes, that is the way, else what Antti suggested also works, i have tried it in my case.
