i found a solution which offers STRING functionalities like Trim/Upper/Substr.... but i dont know how to use these functions to update an existing record (contact first name as an example).

You need to select this any of the options available and then need to check it's property by clicking on set property button to see if there is any input parameter , if yes set your field which you can to send as parameter for exam contact first name, Later use Update steps from Add Step and in contact form keep your cursor in first name field, then you need select project from Form Assistant, check last screenshot in my post how I am using output argument form custom workflow: http://himbap.com/blog/?p=1672
then you can run your workflow for the existing record (keep in mind to select On Demand in your workflow).
