I am triggering a workflow when an Opportunity Product is created and I am trying to update a custom field on the Opportunity to a value on the Opportunity Product -> Existing Product -> Parent
I can't seem to get any 'deeper' than just the Existing Product -> Parent (see below) - this just displays the name of the Parent product associated with the Existing Product.
My question is how can I access the actual fields of that Parent product? Is this possible? If you have a product that belongs to a Product Family, how can you access fields from the product family to utilise in the workflow?

Unfortunately within workflow, you can go just one level deep. It is currently not possible to get the related -> Related > field. You will need some custom code (Custom workflow activity) which will accept product and return the same product. You can then use that to access fields.

You could try to change "Existing Product" to "Parent bundle product (Opportunity Product)", then select Parent field value.
Can this meet your requirements?
I tested on D365 and successfully get and set the value of the parent product's fields.
The premise is that there is the N:1 relationship of Product and Product .
