I want to create a new Order on an Opportunity and have it render as if I clicked the "+" sign (to create a new order).
Is it possible to get access to these actions/processes? Is there a way to call that function in my code (that is supported).

Can you let me know where you are expecting to see this functionality?
Like, if you want to put your button on the form, you can refer this -
d365demystified.com/.../create-a-new-record-button-for-activity-type-entity-using-ribbon-workbench-d365 (I did this in terms of Activity entity)
docs.microsoft.com/.../openform (You can use this in the method you'll define in your ribbon workbench button)
Or else, if you have an existing relationship or want to create a relationship from Opportunity to Orders, you can simply add a sub-grid on the Opportunity form and keep adding more Orders to your Opportunities.
Depends on what you want to use it like.
Sorry if not clear.
I have an Opportunity record and on it I have a grid where my orders will display. If I click the "+" sign above the orders grid, a new order window will be opened and all the details from the Opportunity will be carried forward.
I want to use Ribbon Workbench to do the same thing, but I'm trying to see if I can avoid doing the work around creating the new order and simply call the function that Dynamics is calling behind the scene to generate the new order.
Just wanted to know if I'm missing anything in tapping into this functionality.

You give a try to this
Open the order entity in ribbon workbench
Search in subgrid ribbon the plus button
right click on it select customise
check for the Command it is calling
Copy that command for example MS.CRM.CreateOrder.blabla
I had done this Activating Quote and was successful
