Let's divide this work into two parts.
1. Catch the event of adding record in the subgrid.
a. Use js to do this directly and here is the sample.
b. Create a rollup field to store the count of the subgrid rows, and add the js code to onChange event of the rollup field.
2. When catching the adding in the subgrid, trigger the js function of populating fields.
In addition, What does "populate few fields from entity1 to associated entity2" mean? Where are the fields on? The entity 1 form or entity2 form? Please kindly share more details about your requirement :)

Currently, the best way is ti use plugins.
If you still want go with JS, REST builder will be helpful.
