Apart from Power Platform Admin Center => Analytics
where else can you gain insights (statistics, dashboards, ...) about how many API Calls you have consumed from your available limits (6000/300 sec; 20000 per user/day, ...) etc?
How to distinguish between those that count against those that doesn't count for these limits?

So it looks like there's no other source of information about that, except of contacting Microsoft?
That is correct. However, this article explains what counts as an API call and what does not.
Sure, knew that as well :-( so the question is: which diagram shows us only the consumed calls that count ?
According to Microsoft documentation, usage reports and monitoring capabilities will be made available in the Power Platform Admin Center soon and this will be the best way to monitor/analyze usage for API requests across the platform.
