There is a last activity date field in the account level.
How do you create a last activity date field on the account so that when you complete an activity with a contact that is part of that account - the last activity date field will auto-populate under the account?

This is a good approach to this problem.
When you say "activity", it includes following
- Phone call
If you are looking with no code approach:
1. Create a new field (Last activity date) in contact also.
2. Create a workflow on change of "Task" entity. Trigger on change of status
3. Check if status = completed
4. if yes, update the "Last activity date" in contact
5. Create a new workflow on contact entity. Trigger point is on change of "Last activity date"
6. copy the "Last activity date" from contact to account.
The above workflow is a sample on "Task" entity. Depending on the activities you want to cover, you need to create separate workflows for each activity type (appointment, phone call, email).
