I'm quite new with CRM and will be grateful for any advices. I will try to explain the case with example: If a user create an opportunity in D365 sales, this opportunity should appear in SharePoint site. I found a way via PowerAutomate flow, but it is triggered when a new record is created. How will be updated the SharePoint with the old data?

- Could you explain it in detail? What does old data refer to?
Based on the example with the "new" created opportunity in D365 which can be transferred to SharePoint via flow, is it possible again with flow, to transferred the previous created opportunities(opps which have been created before the flow "turned on". I mean this as old data).

If opportunity is created from CRM interface and document is uploaded from CRM only, you don't need flow for this, you can implement this using OOTB Dynamics 365 CE and Share Point integration.
After enabling SharePoint integration as soon as you will upload document to existing record SharePoint folder will be created. (Actually when you will click on the Document location record grid, it will setup SharePoint folder for that entity)
