I am working on a sales implementation for a client. We are trying to keep the solution completely out of the box and without custom entities and custom code. We are working with 3 entities: Contacts, Accounts, and Opportunities. Activities are a big part of the client's system usage and they have requested some modifications to the OOB Activity functionality. I am not aware on how to make these updates so I wanted to see if there is a way of making these changes from a configuration perspective without using any custom code. The feedback is below:
I haven't seen a way to accomplish any of these requirements and they are important to the client. Is anyone able to point me in the right direction on how to achieve these?
1.Update Activity Type filter to only display Phone Calls, Tasks, Appointments & Emails.
Unfortunately, you can't remove any options from the list through any OOB settings, but you can refer following link, which provides some options:

2.Ability to Search on a Timeline by the Owner of the Activity (I can see all of the Activity records user John Smith owns on the Account for Contoso)
The following options are available on the filer menu, you can't filter by owner in timeline:
However, you can open 'Activities' tab in account form to display views of activity:
You can add 'Owner' field to activity views, then you can use column filter to achieve it.
3.Prevent Activity rolling up to the Parent Account
The client is using a hierarchical Account structure (Tier 1, Tier 2, Tier 3 Accounts) - they don't want an Activity that is on the Tier 3 Account to rollup to the Tier 2 Account. They only want to see activities specific to that Account.
Unfortunately, you can't achieve it.
You are using OOB 'Parent Account' lookup field to build structure, right? It's relationship type of behavior is ‘Parental’.
When relationship type of behavior is ‘Parental’, it can show child’s activity in parent timeline by default.
You can create a new relationship between accounts, and type of Behavior is 'Referential'.
which can make parent account(02) not show activities from child account(03).
but it can't build hierarchical Account structure for account 03(Only ‘Parental’ behavior can build structure ).
