I want to change the fields in the lead to the opportunity sales process. For example, I want to add a custom field here. In which entity, should I create my custom field? In the opportunity?
Also, it seems that all these fields do not belong to the opportunity. For example, I checked the fields and I couldn't find the "identify stakeholder". Where is that field?
If you want to add the new field to the BPF - yes, you have to add that field to the opportunity.
The reason why you don't see "Identify Stakeholders" as an attribute is that MS designed that BPF and what is allowed to them - not always allowed to us as customizers.
