In our company, we use Datatrax information system to keep records on our customers. Could Microsoft Dynamics CRM (Unified service desk extension) pull information from datatrax for use within the software?

I think you can do that, but you need to connect to your CRM using the Web Services defined in the SDK options: www.microsoft.com/.../details.aspx
I don't know your version but I shared with you the CRM 2015 SDK version.

Yes. The USD supports hosting Web applications (like Datatrax), Windows Applications, and Java Applications. You will need to use the HAT (Hosted Application Framework) Software Factory to interface with Datatrax intelligently.
If you look in the USD SDK (which Andres linked), there is a help app that has some good explanation. Look for "Create HAT Automation" and "Use HAT Software Factory to create hosted application" for a good starting point.
Once you have turned Datatrax into a hosted application that USD knows about, you can then start defining custom actions for it based on the DOM of Datatrax. This could include pulling up a Datatrax record based on license plate number entered into CRM, for example.
