I am currently using Server Side Sync' to handle both Incoming & Outgoing emails AND have CRM for Outlook configured.
Is it possible to Untrack an email that has been tracked using Server Side Sync and if so how can this be done - the Track button in Outlook, when clicked, doesn't appear to have any effect.
If the email is tracked directly from Outlook then clicking the track button would untrack the email and give the option to remove the corresponding record from CRM.
In your CRM Server, go to Settings| Administration | System Settings | Email, an unselect option: Track e-mails sent between CRM users as two activities.

The email that is been tracked in the Org through server side sync cannot be untracked.
The email that has been manually track in CRM org through Outlook client can only be untrack through Outlook.
This is by design.
