I want to build an Account advanced find view which look for accounts that have only quotes modified on or before 1/1/2012.
the problem that with this [ACCOUNTS Quotes Modified On [On or before] 1/1/2012] i find also the accounts that have quotes modified on before or after the date.
If the system find just one quotes modified on after 1/1/2012 within others modified on before 1/1/2012, it put the account associated as a result.

There's no way to build this kind of a view definition on CRM 2011, as left outer joins are not supported. Basically what this means is that you can't build a query criteria to search for data that isn't there (a quote modified on or after 1/1/2012 does not exist). You can however get a list of such accounts by performing the query in two stages and using a marketing list as a holding bin for the results after the first step.
Create a marketing list for accounts
Add all the accounts that have quotes modified on or before 1/1/2012
Remove from this list all the accounts that have a quote modified after 1/1/2012
In CRM 2013 there will be support for left outer join queries in FetchXML, but you still need to manually construct the XML, so building the query in Advanced Find won't be supported. See the following article for more details: www.gapconsulting.co.uk/.../left-outer-joins-in-crm2013
