we have a D365 CRM Online Environment and Exchange Online. We can send E-Mails from CRM but it is not synchronized in our Outlook "sendet messages" folder. In my mind it should show in this folder, right?

If you send emails directly from Dynamics 365 using a server-side-sync. That email will not appear in your sent folder.
If you want a record of the sent item in your actual outlook I suggest using the Dynamics 365 app for Outlook and tracking your sent emails using the app from your Outlook or bccing in all your emails going from Dynamics back to the original inbox.
Thanks for your answer. We use Dynamics App for Outlook and we configured E-Mail configuration to Server-Side Synchronization. But since i use the same mailbox, I assumed that the crm mails would also be synchronized with my outlook. If I understand you right than i must track each mail in outlook to have the mails on both sides (Outlook and CRM)?
It is possible to synchronize the send mails folder in outlook which I sent from crm without tracking each Mail?
This answered all my questions.
