At our company we are using CRM on premise (Microsoft Dynamics 365-Version 1612 (126.96.36.199)). We would like to analyze the usage of separate modules/entities (e.g. number of opens). Is there any possibility to do this considering that we are working with an on-premise-system? So far I've only found the User Adoption Monitor app but I was wondering if any other option is available.

There is no Insights for OnPremise environments, however you could use SQL reports to extract some information. Something similar to this: docs.microsoft.com/.../performance-dashboard
The User Adoption Monitor (community.dynamics.com/.../activate-user-adoption-monitor-supports-both-microsoft-dynamics-365-crm-online-as-well-as-on-premises) still would be your best option here, however other tools could be explored like Power BI and SLQ Nexus:
IIS Logs also could hep you extract information about user access for example.
