Is it possible to use Bring-your-own-database to overwrite the default D365FO SQL Database (the default will be AxDB)?
Would renaming AxDB to AxDB_old and importing a new database named AxDB allow D365FO to use the new AxDB by default, or would D365FO use AxDB_old?
If 1 and 2 are not possible, are there any other ways to get D365FO to use another Database NOT AxDB?

If you are on the cloud deployment environment, this is impossible.
What are your actual business needs, does BYOD meet your requirements?
So both 1 and 2 are impossible, right?

I'm not sure what's your underlying requirement. But you can copy databases between environments, overwriting the target database with a database from another system.
