Set regarding to Account, COntact, opportunity or quote when tracking email

Dear all,

What I start a conversation with a potential customer, initially I have no account available for him but only a contact. So the first track email will be attached to contact entity.

Then when that same customer request a quote, I will be creating an account, opportunity and quote.

At that time, does reamining email conversation with that initial contact is kept as Contact or is it better to change the Set regarding to the created quote or opportunity ?

How to handle all of those for a same customer ?
