I'm looking to create a segment based on our orders. I was just wondering is this is possible or if there is a way around this?

of course you can.
1. Enable Orders and Order Products for sync with Customer Insights. as per screenshot below
Marketing > Settings > Marketing data config > Check the boxes for the Order entities > Publish changes > Give it half an hour to catch up.
2. Create your segment as per screenshot.
Marketing > Segment > New > Demographic > New Related entity > Configure segment criteria. You can be more specifioc if you wanted only specific products in the order.
