If it's possible to send notification email to sales manager when sales update the notes in their opportunity?
I would like to create a workflow , however , I can't find " Notes" field

I tried it and luckily it worked, You need to create your workflow on Notes entity.
After that in the first step, you need to check condition like below screenshot
If(Regarding(Opportunity Topic contain data))
then set email
