if you want to change SubGrid/Grid query dynamically. you can use plugin. register this plugin on RetrieveMultiple Message on Pre-Operation and change query inside the plugin.
or you can use javascript to change query for subgrid.

What do you mean by "change" ?
If you have data in subgrid, this means, there is a relationship between the parent record and the child records.
you can filter the displayed information with some JS.
remove / add data with JS/Plugins.
