I have set up a price list and added it to my contact.
However, when I create a new salesorder and add the contact, I still have to choose the pricelist manually.
Is there any OOTB functionality that I can use, that would automatically select the correct pricelist after choosing the customer?

I would like to say it is the answer but the price list is still not automatically added when the customer is selected in the salesorder entity.
I am using on premise, but I don’t think it should made a difference.

This functionality can be achieved using a workflow, as shown below.
You need to look for Customer (contact) or your custom relationship if you use one.
Set the workflow to be triggered when you Update the Contact field. The workflow needs to have at least 1 step: Update record for sales order.
