Hi,
I hope everyone is doing well! I'm wondering if there is way to save the sorting in the quotes to the customer list? Right now it starts with the oldest quote which isn't really relevant.
It would be better if we could always start the list with the latest quote. Is it possible?

Not something you can save as a user. Only filters can be saved in the “views” feature at present. It can be achieved with a page extension. Your alternative could be to use a different UI - powerapps, power BI or excel
