How many forms you want to create ?
There is no limit although but creating multiple forms (more than 10 ) sometimes not a good practice, user need to navigate which makes extra click, loading time when you could show/Hide fields ,section ,tab .
The idea is to create multiple forms when we use role based forms you don't need to write any code , if you are using role based forms or you have some customer 360 view where you need to display multiple type information then its good to go but not more than 10 I believe.

There is no limit as such on the number of forms. However i have seen projects with more than 30 forms.
But generally the form customization should be done in such a way that you can use JS, BR to show hide fields etc and use very less forms.
