Simulating Offline/Disconnected Mode for POS in LS Central

How can I set my POS to Offline mode in LS Central? How does it differ from Online mode? Any relevant information regarding this is highly appreciated.

    Square does this in their register app. You don't actually need to use their credit processing to use their system. It does inventory, cash management, customer management and the cash only portion can be used without wifi
