I am trying to find a report that will tell me when all of my items were last entered on a SOP document.

Victoria is correct, this has to be created as a custom report. I have done it for a few customers myself.
There is, however, a turnover report that comes close and may be better for you. It tells you, based on the volumn of sales and the average quantity on hand how many times your inventory is turning. This report addresses each item on hand individually. It also rates the high/low turn items. You can then look at the slow movers or "fast to sell out" items to adjust your stock plan.

I don't believe there is such a report in GP, but I have some SQL scripts posted for this if you are open to creating a custom report:
SQL view for last sale date of item
SQL view for last sale by customer and item
These will only look at posted invoices...if you're looking to see the last time something was entered on an order, you'd need to make some modifications.
