Well, that's pretty annoying. You'd figure they'd have fixed this a year later, but they haven't.

Hello,
To edit a form in Unified Interface in Dynamics 365 you need to go to Settings - Advanced Settings:
This will open Settings. Once you are here you can go to Customizations and edit your form or using Customize the System or Solutions.

not sure that the PowerApps folks would agree that the form editor is "classical" but, the only other way that I can think of is editing the xml in a solution; this is an area where one should tread lightly.
Have you run into some issue using it? I find it is much nicer for on-premise situations but, I'm using IE and my difficulties may be with that.
Currently Not but you can go into Settings of classic version directly from Form.
Click on Configure Icon & "Personalization Settings". This will open Settings into classic version
