After creating Sales entities like 'Quotes' or 'Orders'. I use the 'Look Up Address' button to populate fields, however, the custom fields don't get populated on it's own. Any suggestions to fix this? From my understanding I can use processes to take care of this.

There does not seem to be an OOB function to populate custom fields.
My idea is to create a workflow that triggers when a lookup field is updated,
populating the custom field with the values from the lookup field.
Automatically create a new record in the custom entity associated with existing entities.
If u need results direct on form the you can use JS with combination of ribbon workbench else you can use normal workflow or power automate flow to populate data on once record is saved.

There is no OOB way to configure this and you are right, you can use processes or plugins to manage this.
