Hello,
Below are two columns in an editable sub grid in a form. Second column is a multi line text, it is possible to increase the height so the complete text is visible without scrolling up and down.

Hi,
Unfortunately it is not possible to change the height of a row or cell in a subgrid, or increase the width of the cell above 300px in any customized way.
You might be able to build a Canvas App to see the subgrid details or in the future there might be some custom PCF (PowerApps Component Framework) controls that will be available for you.
