Can we expand the View selector in UI so that we can view the entire name of the view.
Is there any way to stretch the view selector. I have check the CSS and its been hard-coded and can't be edited

You can't customize CSS or rendering of the list of views, but know that the view and dashboard list density improvements are an enhancement that's coming with the 2020 Release Wave 1.It's already available for preview as part of the Early Access (here's own to enable it: https://docs.microsoft.com/en-us/power-platform/admin/opt-in-early-access-updates)
This will automatically apply to all customers and users in April 2020. This will render like this:
