What happens when you open the record? Do you still see *unhandled* on the form? When you delete the optionsset value, it is deleted and would not appear but it actualy stored the old values in the daatabase. If I am not wrong when you open the recordsn and then save/ close it, it will fix the issue for that record.

Could you please clarify if you have disabled the editable grid but it is still displaying it as editable or you have deleted the option from the field and it is showing as *unhandled*?
If it is the field, then check if the field value is actualy deleted from the system or not. Try publish all customization and in private session.

Make sure the control is deleted from the entity.
Don't forget to Save and Publish All Customizations.
