1. is there an option to modify the columns on the merge records screen? (see screenshot)
2. is there an option to have a resolved case as the 'master' after merging? it seems that only active record can be chosen as the master for the merge

You are right you can only merge into an active case. Canceled and resolved cases will be read-only meaning the merge couldn't update them.
To merge into the resolved case you would need to re-open it first.
