Hi, can you add an item to a sales quote that does not yet exist? so no item number, want to quote for it but not yet have it created in the system in case we don't go ahead with it?

Yes, you can use something called Catalog Items (docs.microsoft.com/.../inventory-how-work-nonstock-items) which sounds like it'll achieve what you're looking for.
In that case I suggest to use a text line in the quote.
