Is there a way to create an activity when an email is sent from Dynamics 365 for Marketing.
I would assume this would be done by default so perhaps I have missed something.
We would like to see whom received marketing/events/invites etc from an Account/Contact level.

Tracking interactions like emails sends is high volume data, and we dont bring this data directly in Dynamics 365 as "Activity". Instead you can look at "Contact" Insights where each interaction such as email delivered is shown. docs.microsoft.com/.../insights
Depending on your scenario you can trigger on email interactions directly within customer journey to create follow up activities like phone call or appointment. If that does not suffice, you can trigger a CRM Workflow on such contacts to achieve more complex scenarios docs.microsoft.com/.../activity-templates
