Is there any way to specify in GP a dedicated printer for checks to be printed to? we have a separate printer only for printing checks and people "forget" to change the printer to/from this printer quite often.

Yes, named printers will do this. You will find this under Setup>System and documentation is in the System Admin Guide manual
