I am wondering if I can make sales invoices show different bank details according to the customer (and not currency/region etc).
Would anyone know how I would go about doing that?

From my point of view you need to do complex changes (to avoid an issue with user's mistakes like a manager forgot to select the right account number before ...)
- to have a field in the Sales Doc and to fill data based on demands (it may be linked with (and Def. data copy from.. {some place based on business-process description}) Responsibility center, Branch, Location, currency, etc.). If you create customer from Template, then you can add this field to both tables and validate data from Customer card.

P.S. NAV has greate purchase&sales functionality, but sometimes simple points are missing - e.g. we have a purchase order from vendor and vendor has 2 or more bank accounts. Each time purchaser & accountant should call to the vendor and ask which account they need to use.. but it is enough to have 1 field only. A similar point with Sales part.
This can be achieved via a report customization. Not difficult to do. In your Sakes Invoice report you can read the customer and then print the bank details accordingly to your needs (I think you need a setup for customer or something similar).
