What data do you delete after a restore from production to a sandbox environment?

While this may very by company I thought it wouldn't hurt to have some discussion with others to generate ideas. We refresh the environment and do want/need sample data but we certainly don't need all of the data we have in prod so I'm wondering what others do for clean-up routines to minimize the capacity your environment uses.
 
For example, we update our audit settings to reduce our log sizes, delete e-mails older than X months, we have Click Dimensions so we purge IP tracking tables.
 
Bonus question, is there a more efficient process that others are using beyond manually creating bulk delete jobs?  One thought that I had was to look at building a solution in Power Automate that I could install after the environment is refreshed but haven't done that yet. While I would anticipate it may not run as efficiently it may save me setup time and clicks overall.
