Hi,
Remote Assist works on HoloLens and AR-capable Android phones at this time. For your situation, I would suggest using the Microsoft Teams sharing feature.
As far as app extensibility goes, Layout does not have any extension capabilities today.

What would be the right sequence to make it work?
Also do you know if at the moment it's possible to extend Layouts with any plugin / code and if it's possible to use models that have an animation?

It can be done, but at the expense of performance as it tends to drop frequently when using the two.
You may be able to use Microsoft Teams to do this. If your Windows Mixed Reality window is set to render what the immersive headset is displaying, then you could use Team's window sharing feature to share out the contents of that window in a call or meeting.
On HoloLens, Remote Assist can be used to stream out a mixed reality video feed from any other app, including Layout.
