In the Item Maintenance screen, there is a field labeld "Sales Tax Option". When I view the IV00101 table and column TAXOPTNS. There is a number.
Which table has the description for the number? I'm assuming there is a table that will indicate which number means; nontaxable, taxable, or based on customer.
If no table exists, which do the values mean?

Unfortunately most of these types of values are not stored in tables anywhere. Frank gave you one great and quick way to look these up. This method will work for some fields like this, but not all. The SDK is a more complete listing of these.
I have tried to put the most commonly used tables and field values on my blog for easier reference. Here is the page for Inventory tables: victoriayudin.com/.../inventory-tables.
Here's how they line up:
1 = Taxable
2 = Nontaxable
3 = Base on vendor or customer
You can find these values by looking up the IV00101 table under Tools>Resource Descriptions. Find the Tax Options field name in the scrolling window and double click on it. The 'Additional Field Info' window will open, revealing the values.
