Lisa, I don't actually give classes, but I do help clients like you with as much (or as little) guidance as they need--when they need it.
This usually begins by spending an hour or so on any given area (e.g. Invoicing, A/P, G/L, reporting, etc.), and digresses down to 5-10 minute sessions as your learning curve accelerates. I usually do this in impromptu screen-sharing sessions.
With some clients, that's where it ends. With others, I seem to continue to get calls or emails that go something like "Could you take a look at this before I post it? I'm pretty sure I've got it right, but I don't want to take a chance on screwing it up".
I'm a CPA, and I've been using D365 Business Central to handle the accounting in my own company for nearly a year and a half, now. If you run into an issue, chances are I've already encountered it myself at one time or another.

I'd consider giving on-line classes if I receive enough demand. Honestly, this "hour-at-a-time" approach seems to work a lot better though. We focus on something that is of immediate interest to the "student", and we're not at it so long that minds begin to wonder off to whatever else the student has to attend to before they can leave work for the day.
