We have a 3-year old server with Windows Server 2008 R2 running SQL for Dynamics SL. Our network has another domain server and 8 PCs, so its small. I'll stop sql services on the server and the resources monitor shows about 2Gb of 8Gb of memory in use. As the hours pass, the memory used by sqlserver.exe goes from 2 to 7 Gb until the server can't think becuase 97% of memory is in use. I stop the sql services and things go back to normal for a while. It's a recurring problem. Any ideas?

I think you should post this issue on the SQL Forum. It does not appear to be an issue with SL.
If the SQL Server is only running the Database engine then you want it to run heavy 85 - 95% ram. But you do need to set your Max server memory and Minimum server memory. You can set Min and Max Server memory as the server is running.
You could try setting the max server memory option in SQL:
