I want to ask if we can create a "time/days to close" report or chart on the opportunity level, showing how many days it's taking an opportunity to close since it's creation date.

This should be straight forward by creating a new calculated field using the DIFFINDAYS() function but the CreatedOn field data type is Date and time whereas the Actual Close Date field type is Date only so it will fail. If you go down the caclulated field route you will need to create a custom Date only Close Date field which you can populate via a Workflow or Flow, this will then allow you to create the function DIFFINDAYS('createdon,'closeddate')
