During a journey, our goal is to have our customers register on our portal. How can we tell that they have registered and get them out of the journey? We know that once the contact record has a security stamp or username, they've registered.

You could create a customer journey like screenshot below:
Send an invitation marketing email to your customers, nest an event tile under marketing email tile.(By dragging the tile directly)
Detect whether customer registered event with trigger tile.
If some of customers have registered, they'll be passed to positive path, there isn't any tile following the path.(Due to at least one tile is required to be added to positive path, we could add a schedule tile to the path, but not to do more actions.)
