Hi Chetan,
Remember that imports through Excel are independent of the Form. The forms allows you to view and edit the information related to a particular record, but imports can be done from the imports menu or the Opportunities view, without accessing the Form.
Using basic security roles to restrict opportunity edit doesn't help you with the problem?
Make sure the user's permissions are set to not be able to write to the Opportunity. When Excel saves back to Dynamics 365, it still takes into account the user's permissions.
