Is it possible to restrict the list of vendors that a user can select from in Dynamics GP?

It is still the case. I am pretty sure we did something similar for a client a few years ago - I would need to check the details - we had three different sites and they wanted each user to only be able to select vendors for the site.
We used Class ID's to group them and then I think we used vba to show the related vendors.
It was a customisation, but I don't think it was a huge one. Let me know if you want some additional details. Otherwise, it is definitely still the case.
There is now (in GP2013) the ability to set up restricted lists (e.g. based on class) and set that as a default view. However, that is done at a user level, so it would be easy enough for users to take this "off" as their default view. This could be a middle ground kind of option.

Rubal is right. OoB it's not possible for GP, but you can buy some additionnal modules to achieve this. I think the Field Level Security offers this option and many more functions. Please contact your MBS Partner to get more details.

Restricting access of user for some records (vendors in your case) is not possible out of the box in GP. You will need a customization for it.
