We have been operating AX for more than a year and a half, and since then we have been suffering from a general slowness of the system that occurs once in a while, on average once every 15 days. However, we have set up a SQL SERVER maintenance plan to recreate indexes .... Would you have experiences and solutions to share? Thanks.

I have tried to refresh my French language. I recognized some words and now translated the message for you.
There can be multiple causes for your slowness. You have to use monitoring on SQL for blocking, long running queries and fragmented indexes.
If you can define which exact process is slow, you can also use the Trace parser to find out if it is due to the database, coding or caching.
Microsoft did create some blogs which can help you monitoring and troubleshooting the issue.
